Spring: a lovely reminder of how beautiful change can be.
Spring weather can be delightful, BUT it can also aggravate the annual springtime allergies. That is where I am right now. Allergies are not fun and I find with any sickness, warm food is a great cure. Warm, nutritional food is even better. It is hard to find that combination appetizing when you are under the weather. That is where the “Hot Spring Salad” comes into play! It is a hearty salad that is sautéed to perfection. Leafy greens and proteins are perfect for springtime allergies, and it can make for an easy meal-prep option. I am not the biggest soup fan, so this alternative is great when I want a warm, light and refreshing meal.
My favorite part about these kinds of recipes is the customization. I don’t eat meat or dairy so that is how I made this recipe, but you can add in more flavors–tailoring it to your tastebuds! Even though this recipe does not have meat or dairy, don’t turn away! You can always add your own twist to any recipe.
